I love salads! There are so many options of what to put on them, from veggies to nuts/seeds to cheese, even beans, like chick peas!
My go-to salad is simple. Just lettuce and tomatoes, with goat cheese (if I have it around).
I’ve been fond of a basic balsamic vinegar and olive oil dressing, but recently came across a recipe for a different kind of balsamic vinaigrette.

Homemade Almond Balsamic Vinaigrette
Ingredients:
1/2 cup water
1/3 cup roasted garlic rice vinegar (I used plain rice vinegar)
1/4 cup balsamic vinegar
1/4 cup raw almonds or 1/8 cup raw almond butter
1/4 cup raisins
3 cloves garlic, pressed
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon onion powder
Blend all ingredients in a food processor or high powered blender.
Pour contents into a bottle. I like to reuse things, so I washed out an old olive oil glass bottle and stuck a label on it.
The taste took a few times to get used to, but now I love it and it’s become a household favorite!
