Who doesn’t love a quick and easy meal? Especially one prepared in advance and already for you in the fridge!
These Tuna Egg Muffins are a variation of my Broccoli Egg Muffins. Pop a few for breakfast or snack. They are perfect for bringing with you on the go or at work.
Ingredients:
• 4 cups Eggs and/or Egg Whites (use just egg whites or a combination of eggs and egg whites to make 4 cups)
• 1-2 Tbsp of spices (choose your flavor – eg. Italian spices {oregano, basil, rosemary} or more spicy {cayenne, chili powder, chipotle powder} Be creative)
• 1 cup broccoli, finely chopped
• 1 small sweet (red/yellow/orange) pepper, finely chopped
• 2 cans of tuna, drained
Directions:
1. Mix eggs in a large measuring cup and add spices.
2. Chop veggies and keep separate.
3. In the bottom of your muffin tin add a few scoops of tuna (evenly distributed) and some broccoli and peppers. Pour the egg mixture on top.
4. Bake in oven at 350 for 20-25 minutes.
5. Remove from heat and let sit for 10-15 minutes before removing.
That’s it!! A super healthy breakfast or snack option.
